Žminjski gušti, or OPG Milan Udovičić, have restored the tradition in the production of cured meat products in Istria. Here’s what he says:
I am engaged in the production of traditional Istrian cured meat products. I started production 5 years ago because I saw that there was a lack of quality products, especially in Žminj, which has always been the production and trade center of Istria. It’s actually my profession and I decided at one point to try to start something of my own.
At the first fair, we received the award of the champion of Istrian sausage, which gave me a push and confirmation that I was doing something right. Today, in addition to sausages and salami, we make bacon, traditional ombolo or žlomprt and meat spreads. We sell at fairs and on the doorstep, but also in smaller shops and restaurants. We even manage to export to London!
Istrian sausage and salami is specific because only classic spices are used – pepper, salt, garlic and wine. This requires more work and effort which is why the quality is high. Family farm Udovičić in Žminj produces Istrian cured meat products. Products made from mature pork grown in a natural way, with the addition of traditional spices. The products are characterized by a mild, unobtrusive taste, typical of Istrian durable products, air-dried without smoking.
They offer sausages, salami, Istrian bacon, ombolo and sausage spread. They are proud owners of the championship title from the international fair “With sausage in the EU” in the Istrian sausage category, from 2017.
